Meal Prep School: Chicken Salad

Holy new years Batman.  After a few weeks off and a lack of posting we are back in the kitchen whipping up some new recipes for all those defunct men and women out there.  Other than making a new years resolution that will not be fulfilled we are going to make a New Year Revolution to the blog with one goal, more directions.  And if there's one thing I know about those damn millennials, they have zero sense of direction. 

In order to get through the rest of our shredded chicken I felt the need to meal prep three different kinds of chicken salad.  It would've been easier to just make one giant portion of chicken salad, however variety is the spice of life and I am a spicy guy.  And a major part of any chicken salad is the king of flavorless texture, celery.

Skills Corner:  Fine Chopping Celery

Step 1:  Wash your stalks for a variety of reasons (see previous blog regarding the contents of dirt).

Step 2:  Cut the ends off, leaving the unblemished celery stalk, discarding the tough white base and discolored ends.

Step 3:  Use the tip of your knife to cut the stalk down the center and repeat that same technique to quater the stalk down to 4 thin strands.

Step 4:  We choppin'... a little fun fact while chopping just about anything, it will hurt if you cut off the tips of your fingers.  In order to avoid this uncomfortable feeling, curl your fingers in and use your knuckles to hold the celery strands together.  Warning; if you are not careful you can still cut yourself, but the worst case scenario is you will slice the back of your fingers which is less nerve filled and heals quicker than the more sensitive tip.  Are we still talking about fingers?

Step 5:  Group the strands in 2 to 4 and repeat until you have nothing left to chop.

Curried Chicken Salad

Ingredients:

  • 1/2 cup olive oil mayo
  • 1/2 cup plain Greek yogurt
  • 1/4 cup of lemon juice
  • 1 tbs curry powder
  • 1/4 cup chopped celery
  • 1/4 cup chopped walnuts
  • 1/4 cup whole golden raisins
  • 1 chopped scallion, tip to tip
  • 1 cup shredded chicken
  • Salt to taste

Mix the mayo, yogurt, lemon juice and curry together in order to ensure an equal distribution of curry powder.  After the wet mixture and curry powder appear they have come together as one, throw in the rest of the ingredients.  Done.

Greek Chicken Salad

Ingredients:

  • 1/2 cup olive oil mayo
  • 1/2 cup plain Greek yogurt
  • 2 tbs Tahini
  • 1/4 tsp fresh cracked pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 cup chopped celery
  • 1/4 cup chopped english cucumber
  • 1/4 cup chopped red pepper
  • 3 tbs chopped kalamata olives
  • 1 cup shredded chicken
  • Salt to taste

The same program as above; make sure when adding spices to a salad like this you mix them separately to avoid chunk and concentrations of dry gritty powder.

Classic Chicken Salad

Do not try and tell me putting grapes in chicken salad is good, plus it's not grape season.

Ingredients:

  • 1 cup olive oil mayo
  • 1/4 cup chopped celery
  • 1/4 cup chopped walnuts
  • Salt & pepper to taste
  • 1 cup shredded chicken

The downside of making all three of these in one sitting is you'll need to eat them in about 10 days before they go bad.  I thought I would get sick of chicken salad but the variety kept me from involuntary retching at the mere sight of the container I stored it in.
